Simple chicken rice for lazy gals like me :P
I used to cook this when I was in Melbourne when I missed chicken rice and too lazy to go out to city to have a nice chicken rice at Chinatown.
There is no fixed recipe on this so here it goes:
1. Cut chicken fillet into bite sizes
2. Soak dried mushroom and cut into bite sizes
3. Wash rice and put into rice cooker
4. Add water as normal
5. Add chicken and mushroom and mix
6. Add seasonings (sesame oil, etc to taste)
7. Mix well and switch on the rice cooker
Once it's done, open up and mix it well. If the rice is not fully cooked yet, you can add some more water and switch on the rice cooker again. Garnish with sliced cucumber and some coriander leaves.
Do take note that you need to cook for at least 3-4 servings at one time otherwise, the water is not enough to cover the ingredients and rice.
